ICC Sydney and Convention Centre Catering: Barangaroo, Doltone, Aerial UTS Delivery Guide

Corporate breakout catering with closed meal boxes, salads, fruit and water overlooking Darling Harbour.

Sydney's convention scene keeps expanding, and so does what delegates expect from the catering. Boxed sandwiches and dry pastry cases no longer cut through. This guide covers how Argentum delivers warm empanadas into ICC Sydney, Doltone House, Aerial UTS, Curzon Hall and Sydney's other mid to large convention venues, plus menu math, loading dock logistics, and how to work with a venue that has its own in-house catering team.

Quick answer. For events at ICC Sydney Barangaroo, Doltone House, Aerial UTS, Curzon Hall and Sydney's mid to large convention venues, Argentum delivers baked or frozen empanadas Sydney-wide. Corporate Box (100 empanadas) serves 25 to 33 delegates as a substantial finger-food component. Scale up with multiple Corporate Boxes for 100+ delegates. 5 days notice preferred for baked, 3 for frozen.

Why convention food is a distinct challenge

Convention catering has two audiences: the organiser trying to make the event feel considered, and the delegate who has already eaten sandwich triangles at three events this quarter. Venue in-house teams are efficient at moving trays, but the baseline menu of sandwich platters, dry canapes and hot buffet stations is well-worn territory for anyone who attends more than a handful of conferences a year.

Adding a warm empanada tray to registration, morning tea, or a networking break gives delegates something distinct without breaking the finger-food format they are already set up for. Empanadas are one-hand-and-a-drink friendly. No plate, no fork, no queue at a carving station. They also cover meat, chicken, cheese and vegan (Patagonia) in the same tray, which sidesteps the awkward two-plate dietary parallel that most buffets create.

Venues we deliver to

Argentum delivers into any Sydney convention or event venue with a loading dock and a delivery-hold area. The venues we get asked about most often:

Venue Location Notes
ICC Sydney Barangaroo External catering permitted with venue coordinator approval. Loading dock on Zollner Circuit.
Doltone House Jones Bay Wharf, Hyde Park, Darling Island External catering by arrangement. Coordinate with in-house events team.
Aerial UTS Broadway (UTS campus) Delivery via UTS goods lift access.
Curzon Hall Marsfield Historic venue, kitchen access via rear.
The Establishment Ballroom George Street CBD Coordinate with Merivale events.
Ivy Ballroom George Street CBD Merivale precinct, external catering by arrangement.

For other venues (Cockatoo Island, Overseas Passenger Terminal, Powerhouse Museum, Sydney Town Hall, university venues) get in touch. If the venue allows outside catering and has a working delivery bay, we can serve it.

Menu building for conferences

The right box depends on how the food fits into the schedule. A rough map by touchpoint:

Registration and morning tea

Delegates arrive stressed and often skipped breakfast. 12-packs ($52 each) laid out on registration tables in mixed flavours give people something warm and immediate without stopping the sign-in flow. For 100 delegates plan on roughly 1 to 1.5 empanadas per person at this touchpoint.

Networking finger food

Mid-morning or late-afternoon networking blocks are where finger food does the heavy lifting. Chef's Box arrays (20 empanadas at $85 per box) let you top up trays as attendance ebbs and flows. Chimichurri jars ($12 each) alongside as a dip station add a working-hands element that gets people talking.

Sit-down lunch component

For plated or semi-plated lunches, empanadas work as the substantial protein element alongside two salads (a green base plus a grain or roasted vegetable option). Party Box (60 empanadas, baked $319) covers 15 to 20 delegates as a full lunch component.

All-day catering by the numbers

Sydney convention catering benchmarks sit at $40 to $80 per delegate for the full day (venue in-house, all inclusive). Empanadas fit inside that at roughly $20 to $32 per delegate when you scale a Corporate Box across 25 to 33 people (or half that as a component alongside salads and desserts).

Serving math and cost per delegate

Delegates Box combo Total spend Per delegate
25 to 33 1 Corporate Box ($499) $499 $15 to $20
50 to 66 2 Corporate Boxes ($998) $998 $15 to $20
75 to 100 3 Corporate Boxes ($1,497) $1,497 $15 to $20
100 to 133 4 Corporate Boxes ($1,996) $1,996 $15 to $20

Serving math assumes 3 to 4 empanadas per delegate as a substantial lunch component, or 2 per delegate as a finger-food add-on to an existing menu.

Delivery logistics into convention venues

Conventions live and die on loading dock access. When you order, share:

  • Loading dock address and gate hours (many CBD venues require dock booking with the venue)
  • Event room number or ballroom name
  • Contact name and mobile of the on-site AV or event coordinator
  • Preferred delivery window (usually 45 to 60 minutes before service)
  • Whether the venue provides warming ovens, or if you need us to time the bake for delivery-as-service

For baked delivery, we time the bake so trays land warm and ready. If the venue has a warming oven, we can deliver up to 90 minutes ahead and let the venue hold. For frozen delivery, boxes travel in insulated packs and go straight to the venue freezer or fridge; the venue kitchen bakes on demand at 190C for 18 to 22 minutes.

Working around in-house catering

Most Sydney convention venues allow outside catering when arranged with the venue coordinator in advance. Standard flow:

  1. Ask your venue coordinator whether external catering is permitted for your booking type
  2. Get any external catering fee or approval requirement in writing
  3. Confirm the delivery bay, timing, and room access with the venue
  4. Book Argentum with the confirmed logistics

ICC Sydney permits external catering for approved bookings. Doltone House and Merivale precinct venues are usually flexible for events where outside catering adds a distinct element the in-house menu does not cover. Some venues charge a corkage-style fee for outside catering; factor that into the per-delegate budget.

FAQ

Which convention venues do you deliver to?

ICC Sydney (Barangaroo), Doltone House (Jones Bay Wharf, Hyde Park, Darling Island), Aerial UTS (Broadway), Curzon Hall (Marsfield), The Establishment Ballroom, Ivy Ballroom, and any Sydney venue with a working delivery bay that permits outside catering. Get in touch for anything not listed.

What is the minimum notice?

5 days preferred for baked delivery, 3 days for frozen. For orders of 4 or more Corporate Boxes (400+ empanadas), give us 7 days where possible. Last-minute events (48 hours or less) may be possible depending on kitchen load; ask.

Does ICC Sydney allow external catering?

Yes for approved bookings. Speak with your ICC event coordinator to get external catering approved for your specific booking type and confirm any fees or requirements. We deliver to the loading dock on Zollner Circuit.

Can you deliver to the loading dock?

Yes. Loading dock delivery is our standard for convention venues. Tell us the dock address, gate hours, and the on-site contact who can meet us to escort trays to the event room.

How do we keep the empanadas warm during service?

Baked delivery lands warm and ready for immediate service. If you need holding, use the venue's warming oven at 90 to 100C. Empanadas hold quality for around 45 minutes at ambient temperature; longer than that use warming.

Can we mix hot and cold platters?

Yes. Common setup for a full lunch: baked empanadas as the warm protein, plus two cold salads and a cheese board. Frozen delivery lets the venue kitchen bake to any timing you want.

How does invoicing work for corporate accounts?

Pay by card at checkout, or request invoice with 7-day terms. Provide company name and ABN and we will issue a tax invoice. GST is included on the invoice (Argentum is GST registered).

Do you need an ABN to invoice?

For invoice terms we require the company ABN on file. For card payment at checkout no ABN is needed.
