The Carnivore is Argentum's slow-cooked grass-fed beef brisket empanada with onion, garlic and red capsicum, made in Bondi Beach and delivered frozen across Sydney. Bake at home from frozen at 190°C for 18 to 22 minutes. No thawing, no prep.

Made in our Bondi Beach kitchen and frozen fresh to lock in flavour. Classic Argentinian half-moon shape, finished with a traditional zig-zag repulgue seal. No thawing needed.
How to bake:
Bake from frozen at 190°C for 18 to 22 minutes, until golden and crisp.
Optional finish:
For extra colour and shine, lightly brush the empanadas with egg yolk before baking.

Why the Carnivore is our bestseller
The Carnivore is the empanada Pedro built the business on. When Argentinians hear the word empanada, this is the flavour they picture. Grass-fed brisket is slow cooked for hours until the fibres pull apart with a fork, then folded through onion, garlic and red capsicum. Nothing added for drama. Nothing hidden behind heavy spice. Just beef, cooked properly, and the vegetables that carry it.
The recipe was built in Argentina long before Argentum opened in Bondi. It has not changed since it landed in Sydney, and there is no plan to change it.
What is inside
Grass-fed beef brisket, onion, garlic, red capsicum, salt and black pepper, folded in a soft wheat pastry. Dairy-free filling. Contains wheat gluten. Roughly 17g of protein per empanada.

How many it feeds
Twelve empanadas feed 3 to 4 people as a full meal (three per person) or 4 to 5 people as finger food (two to three per person). For larger groups, look at the Chef's Box ($85) or the Weekly Family Box ($132).

Straight from freezer to a preheated oven at 190°C for 18 to 22 minutes. No thawing, no oil, no fuss. Brush with egg yolk before baking if you want the deeper golden colour you see in our photos.

Frequently asked
Does the Carnivore contain olives?
No. The current recipe has no olives. If you want the olive note, try the Athlete.
Is it halal?
Not by default. The beef is grass-fed but not halal-certified. For halal, request the Habibi Yalla halal variant on a catering order.
Is it kid-friendly?
Yes. Mild seasoning, no chilli, no heat. Most kids come back for a second one.
Does it contain gluten or dairy?
Contains wheat gluten in the pastry. The filling is dairy-free. Not suitable for coeliacs. Gluten-free is only available for large catering orders with a week's notice.
Can I refreeze after baking?
We do not recommend it. Baked empanadas are best eaten the same day, or refrigerated and reheated once at 180°C for 6 to 8 minutes.
How long do they keep in the freezer?
Six months from delivery when kept at 18 degrees below zero or colder.
