How do I build a fortnightly freezer system?

Start with the anchor. The anchor is whatever you trust to feed the family in 25 minutes from frozen, without thinking. For the households we ship to most weeks, that's a tray of empanadas. From there, you layer in three categories around the anchor: protein staples, fast carbs, and green saves.

A 14 day cycle suits Sydney life. Long enough that you're not living on the same meal, short enough that the freezer never goes stale. The simple rule: every shelf in your freezer should have a job. If you can't say what a shelf is for, that's where the chaos lives.

What should I keep in a "set and forget" freezer?

A set and forget freezer means you can open it on any night and pull together a dinner in under 30 minutes without a recipe. For a family of four, that usually looks like this:

  • Anchor meal: 30 frozen empanadas from your Family Box, ideally split across two or three flavours so weeknight dinners don't repeat.
  • Backup anchor: a Chef's Box or a second pack for the weeks you have people over.
  • Protein staples: chicken thighs portioned flat, mince in 500g packs, white fish fillets.

How many empanadas should I keep stocked?

The rule of thumb we use with regulars: 3 empanadas per adult, 2 per child, per meal. A family of four (two adults, two kids) is 10 empanadas a dinner. A 30 empanada box covers three family dinners, with a couple left over for a school lunch or Pedro's favourite afternoon snack (a single empanada from the air fryer with a glass of water).

If you do empanadas once a week (most subscribers do), 30 every 14 days is exactly right. If you do them twice a week, you want more. Two boxes a fortnight, or pair the Family Box with a Chef's Box top-up.

Is fortnightly delivery enough for a family of four?

For empanadas specifically, yes. Fortnightly is the sweet spot for most families. A weekly box means you're eating empanadas more often than you probably want, and a monthly box means you're rationing them.

14 days is also the cadence that keeps the freezer rotating cleanly. By the time the next box arrives, the previous one is mostly gone, so you're not Tetris-ing trays into a packed freezer. The shelf you've assigned to the anchor stays clear and ready.

Can I mix Argentum with other frozen meals?

Absolutely, and the best freezers do. The point of an anchor isn't to be the only thing in there. It's to be the one item you trust completely so you can experiment with everything else.

How do I rotate my freezer stock?

Two rules, both boring, both work:

First in, first out. When a new box arrives, slide it behind the existing stock, not in front. The older empanadas come out first. Empanadas keep for 6 months at -18C, but in a working family freezer they rarely last more than 6 weeks.

Label your dates. A piece of masking tape with the delivery date on each box solves 90 percent of "is this still good" anxiety. You'll almost never need it because of the FIFO rule, but the label is the insurance.

One more habit: every fourth delivery, do a 5 minute audit. Pull everything out, check dates, throw out anything mystery. This is the only "freezer cleaning" most families ever need.

What's the best freezer organisation strategy?

Zones. Decide what each shelf or drawer is for and don't break the rule.

The fortnight, in practice

Pedro's fortnight, as a working example. Two adults, two kids, a busy week and a slightly less busy one.

Week 1 (box arrives Monday): empanadas Tuesday and Thursday, a roast on Sunday from the protein staples, gnocchi-and-pesto on the night someone has after-school sport. Two no-cook lunches from the green saves.

Week 2: empanadas Wednesday (the easy mid-week reset), fish on Friday, chicken thighs marinated on Saturday for a slow weekend dinner. The last few empanadas get baked off as a Sunday lunch with chimichurri.
