An Argentinian empanada is defined by three things. The dough, thin and tender, made to carry a heavy filling without breaking. The filling, slow-cooked, heavily seasoned, never dry. And the repulgue, the decorative seal along the edge, traditionally different for each flavour so no one bites into the wrong one.
