Vegan without the disclaimer
Patagonia is the empanada we serve to committed vegans and card-carrying carnivores at the same table. Nobody spots which is which. Mushrooms are grilled first, so they carry a proper savoury weight. Spinach, kale and carrot come in for green, sweet and colour. Potato cheese binds it all together with a soft, creamy pull.
The green dough is not for decoration. It is coloured with spinach folded into the pastry, the way certain regional cocinas in Argentina distinguish vegetable empanadas from meat at a glance. It is also how you know which one is safe on a mixed catering platter.

How many it feeds

Straight from freezer to a preheated oven at 190°C for 18 to 22 minutes. The green dough will crisp and turn a slightly deeper green. No egg wash needed to keep it vegan.

Is Patagonia fully vegan?
Yes. No dairy, no egg, no honey. The dough is spinach-coloured and vegan. No egg wash is used in production.
What is potato cheese?
A creamy vegan binder made from potato and plant fats. Similar mouthfeel to a mild cheese, no dairy.
Is it kid-friendly?
Yes. Mild, green, no chilli. A useful way to get kale and spinach into younger eaters.
Does it contain gluten?
Yes, wheat gluten in the pastry. Not suitable for coeliacs. Gluten-free is only available for large catering orders with a week's notice.
Can I refreeze after baking?
Not recommended. Best eaten the same day, or refrigerated and reheated once at 180°C for 6 to 8 minutes.
How long do they keep in the freezer?
Six months from delivery when kept at 18 degrees below zero or colder.
Why is the dough green?
Spinach folded into the pastry. Traditional in some Argentinian regional cocinas to distinguish vegetable empanadas from meat.
