Wood-fired parrilla, waterfront tables, empanadas and provoleta as proper starters, steaks from $45 to $125. Weekday Express Lunch from $28. Easier to book than Porteño for larger groups.

3. La Boca Bar & Grill (Mascot)
The long-runner. Inside Stamford Plaza Sydney Airport at 241 O'Riordan Street, Mascot. Chef Nicolas Arriola leads a kitchen built around a wood-fired parrilla and asador, with a signature all-you-can-eat asado where diners feast for 90 minutes on Wagyu brisket, lamb shoulder, pork belly, grilled chicken and chorizo. Airport-hotel address, better than the address suggests. Available Monday to Sunday for dinner between 5pm and 8pm bookings.

4. WyNo x Bodega (Surry Hills)
