Pedro's Chimichurri. A 200ml jar of traditional Argentinian herb sauce, made in Bondi Beach with parsley, oregano, garlic, red wine vinegar, olive oil, and a slow build of chilli. Thick enough to spoon, bright enough to lift everything you serve with it. Vegan and gluten-free.

Chimichurri is the sauce every Argentinian household argues about. Pedro grew up with his mother's version on the table every asado weekend, and this is the one he pours over his own empanadas at home. Made in small batches in Bondi Beach so the herbs stay bright and the oil never separates on you.

How to use it (beyond empanadas)

Chimichurri is one of the most versatile sauces in the world. A short list of what customers actually do with theirs.

  • Empanadas. Baked, fried, or reheated. A dip on the plate, or spooned over the top.
  • Steak. The traditional Argentinian pairing. Rest the steak, then spoon chimichurri over it.
  • Eggs. Fried, scrambled, or on avocado toast. Chimichurri on eggs is a small revelation.
  • Roast vegetables. Pumpkin, potato, cauliflower. Tosses through hot roast veg like a bright herb dressing.
  • Sourdough. Warm bread, olive oil, chimichurri. Simple lunch.

The oil may firm up in the fridge. Take the jar out 10 minutes before serving so the sauce comes back to a spoonable texture.

FAQ

Is it spicy?

Mild to medium. The chilli builds slowly rather than hitting you upfront. Comfortable for most palates, present enough to feel.

How long does an opened jar last?

Refrigerated and sealed, up to 2 weeks after opening. If you want it to last longer, freeze small portions in an ice cube tray and defrost as needed.

Is chimichurri vegan and gluten-free?

Yes to both. No dairy, no eggs, no wheat, no additives.

Do I need to refrigerate before opening?

Yes, keep the jar refrigerated the whole time. If the oil solidifies in the fridge, take it out 10 minutes before serving.

Can I use it hot?

Traditionally chimichurri is served at room temperature, spooned over hot food. Don't cook the sauce, it dulls the fresh herbs.

Can I buy chimichurri without empanadas?

Yes, but Argentum's minimum order is $48. Add a jar or two to a Chef's Box or a Family Box, or stack multiple jars to meet the minimum.

Are Argentum empanadas delivered frozen or baked?
Retail orders ship frozen, ready to bake at home in 18 to 25 minutes. For catering and events, we deliver baked fresh or fry in beef tallow on request.
How long do frozen empanadas last?
Up to 6 months in the freezer when stored at minus 18°C or colder. No thawing needed. Straight from frozen to oven or air fryer.
How do I bake them?
Preheat to 190°C. Bake from frozen for 18 to 22 minutes for classic half-moon empanadas, 23 to 25 minutes for Habibi Yalla. Air fryer at 180°C for 12 to 15 minutes works too.
Do you have vegan or vegetarian options?
Yes. Patagonia is fully vegan with signature green dough. The Classic is vegetarian with three cheeses and caramelised onion.
Where do you deliver?
Across Sydney metro. CBD, Eastern Suburbs, Inner West, North Shore, Northern Beaches, and beyond. Delivered frozen to your door.
Is there gluten-free?
Gluten-free empanadas are available on request for catering orders with a week's notice. All five flavours, same quality. Our standard retail range uses traditional wheat dough.
